What is the difference between almond flour and almond meal?

Almond flour is ground from blanched almonds with the skins removed, so it is fine and pale. Almond meal keeps the skins, which makes it coarser and flecked with brown. They swap in most cookies, crumbles and brownies. Use fine almond flour for macarons, financiers and light cakes, where a gritty or speckled crumb would show.

Can I swap almond flour for all-purpose flour one for one?

Not reliably. Almond flour has no gluten and far more fat, so a wheat recipe made with it tends to spread and crumble. Start with recipes written for almond flour, like every one on this page, since the extra eggs or binders they call for are doing the job gluten would. Blending in a higher-protein flour such as lupin flour also helps the crumb hold together.

Why do my almond flour bakes brown too fast or fall apart?

Almond flour is rich in natural oils, so it browns sooner than wheat flour. Bake around 325 to 350°F and lay a sheet of foil over the top once it is golden. Crumbling usually means it left the pan too soon. Almond flour cakes, bars and cookies firm up as they cool, so give them 10 to 15 minutes in the pan before you move them.

Is almond flour gluten-free?

Almond flour on its own is naturally gluten-free, since it is just ground almonds. Whether a finished dessert is gluten-free depends on everything else in the bowl, like oats, chocolate or baking powder, and on where each ingredient was packed. If you are baking for someone who has to avoid gluten, check every label for a gluten-free claim and any shared-facility note.

Are almond flour desserts keto?

Only some of them. Almond flour is low in carbs, but plenty of the recipes here use regular sugar, honey or maple syrup, which keeps them off a keto plate. The low-carb ones swap in a sugar-free sweetener. Allulose tastes and bakes like real sugar with 0 net carbs, which makes it the easiest swap if you want to convert one.

How should I store almond flour?

Almond flour is high in oil, so it goes stale and bitter faster than wheat flour. Once the bag is open, keep it airtight in the fridge for a few months or in the freezer for longer. Let it come to room temperature before baking, since cold flour firms up the butter and changes how a batter mixes.
