Keto Thanksgiving Desserts

Thanksgiving is a dessert holiday that happens to come with a turkey. Pumpkin is the easy keto swap. Pecan pie is the real test, since the classic is mostly corn syrup and sugar, so it gets a section of its own. Thirty keto Thanksgiving desserts from bakers who make them every November.

The main event

Keto Thanksgiving Pies & Tarts

Pumpkin is the easy one. Pecan pie takes a little chemistry, and apple takes a vegetable in disguise. All of them are here.

FROM OUR PANTRY

The pecan pie fix

Pecan pie runs on corn syrup and brown sugar, which is why the keto version is the hard one. Allulose tastes and bakes like real sugar, with 0 net carbs and no cooling or chemical aftertaste, so the filling tastes like the one you grew up with. Reach for it anywhere these recipes call for a sweetener.

Go nuts

Keto Pecan Desserts

Pecans are one of the lowest-carb nuts there is, which makes this the section with the most room to play. Bars, blondies, sandies and old-school candy.

Make it the day before

Keto Thanksgiving Cheesecakes

Cheesecake needs a night in the fridge anyway, so it is the dessert that is finished before the turkey goes in.

Cut a big slice

We've Got Answers

How do you make keto pecan pie set without corn syrup?

The eggs do the setting. The syrup is there for the gooey texture, so keto recipes rebuild it: simmer allulose with water and a pinch of xanthan gum until it thickens, or use a liquid allulose. Bake until the center barely wobbles, then let the pie cool for at least two hours before slicing. Some erythritol blends turn crunchy as the pie chills, which is one more reason bakers reach for allulose here.

What is the best low-carb crust for Thanksgiving pies?

Almond flour is the default. Press it in with melted butter for pumpkin and custard pies, or roll it with cream cheese for a flakier double crust on a mock apple pie. Coconut flour soaks up far more liquid, so use about a quarter as much. Lupin Flour, at 1g net carb per serving, adds structure; mix it half and half with almond flour for a sturdier crust.

Can I make keto Thanksgiving desserts ahead of time?

Most of them, yes. Cheesecakes, mousse and no-bake bites are better made a day or two ahead. Pecan pie keeps covered in the fridge for up to four days. Cheesecake and pecan pie bars freeze for up to three months - wrap slices one by one and thaw them overnight in the fridge. Custard pies like pumpkin freeze less gracefully, so bake those the day before.

Are cranberries keto?

Fresh and frozen cranberries are, in dessert amounts. A half cup of whole berries runs about 4 grams of net carbs, and most recipes spread a cup or two across a whole pan. Dried cranberries are a different story: nearly all of them are sweetened with sugar, so check the bag or leave them out.

How do I swap allulose into a recipe that uses another sweetener?

Allulose is a little less sweet than sugar, so use about a third more than a 1:1 sugar substitute calls for, and taste the batter. It browns faster than sugar too, so lower the oven by 25°F or tent the top with foil for the last part of the bake. It fits best where a recipe wants a brown or liquid sweetener, like pecan pie, caramel and pralines.

What is one keto dessert the whole table will eat?

Cheesecake, almost every time. Cream cheese, eggs and a nut crust are already low-carb, so the keto version tastes like the regular one. Pecan pie bars come a close second. Save the mock apple pie for the people who asked for keto - the chayote trick is good, and it is still a trick.
