What is malted milk powder?
Malted milk powder is made from malted barley, wheat, and milk - grain that's been sprouted, dried, and combined with dairy into a fine powder. It brings a warm, toasty, slightly caramelly flavor to whatever it lands in. It's the signature taste of an old-fashioned diner milkshake, and it works the same magic in cookies, cakes, and frostings.
What does malted milk powder taste like?
Warm, toasty, and gently caramelized - like the flavor cousin of brown butter or dulce de leche. It adds depth rather than sweetness, which is why bakers use it to make chocolate taste more like chocolate and vanilla taste less flat. If you've had a proper malt at a diner, you already know it.
What's the difference between malted milk powder and diastatic malt powder?
They're different tools. Malted milk powder is non-diastatic - its enzymes are deactivated, so it's purely a flavor ingredient for cookies, cakes, frostings, and shakes. Diastatic malt powder has active enzymes that feed yeast, improving rise, browning, and crust in bread baking. Use malted milk powder when you want that toasty malt flavor; use Diastatic Malt Powder when you want your bread to perform. They're teammates, not substitutes.
How much malted milk powder should I add?
Milkshakes: 2-3 tablespoons per shake for classic diner flavor. Cookies and brownies: 1/3 to 1/2 cup added to your dry ingredients - start low and add more if malt is the star. Cakes and frostings: mix 1/4 cup into batter, or sift 1/4 to 1/2 cup into buttercream. The flavor builds, so taste as you go.
Is there a substitute for malted milk powder?
Not a true one. Plain milk powder adds dairy richness but none of the malt flavor - the toasty depth comes from the malted barley, and nothing else replicates it. If a recipe is built around malt, it's worth using the real thing; in a pinch, you can leave it out of most cookie and cake recipes and still get a good (just less interesting) bake.
Is malted milk powder gluten-free?
No. Malted milk powder contains malted barley and wheat, and ours is processed in a facility that also handles eggs and soy. It isn't suitable for anyone with celiac disease or gluten sensitivity.
