Christmas Cake Ideas
A Christmas cake is the one bake the whole table turns toward. It also asks less than it looks: one batter, one frosting, and decorating that is mostly sugared cranberries and a snowfall of coarse sugar. Thirty ideas here, the showpieces first, then gingerbread, bundts and sheet cakes for a crowd.
Six to Bake First
One from every section. If the table only gets one cake this year, pick it here.

Classic Buche de Noel
A four-egg chocolate sponge rolled warm in its parchment, filled with sweetened whipped cream and coated in ganache dragged with a fork for bark. A teaspoon of Espresso Powder in the sponge deepens the chocolate.

Christmas Tree Cake
Dutch-process chocolate cake stacked and carved into a cone, then covered in green buttercream piped as branches, with a video for the piping. Built on Dutch-process cocoa, so ours slots straight in.

Cranberry White Christmas Cake
White cake layers, a from-scratch cranberry filling and white frosting under sugared cranberries, rosemary and a sprinkle of sparkling sugar. The cake this whole page is built around.

Gingerbread Layer Cake with Cream Cheese Frosting
Ginger, cinnamon, nutmeg and cloves in three molasses-dark layers, weighed out per pan so they bake even, under a cream cheese frosting. The cookie, in cake form.

Eggnog Bundt Cake
Pound-cake crumb, a vanilla bean, nutmeg and three quarters of a cup of eggnog, dusted with powdered sugar. Dust it with White Sparkling Sugar instead and the snow stays put.

Chocolate Peppermint Sheet Cake
One pan, 9x13: Dutch-process cocoa bloomed in boiling water and peppermint extract in the batter, under peppermint buttercream and crushed candy canes. Serves 24 and frosts two days ahead.
Yule Logs and Roll Cakes
A sponge rolled warm in a towel, cooled, filled and rolled again. Gingerbread, eggnog, white chocolate and classic chocolate versions, with the bark and the meringue mushrooms that make a roll a log.

Classic Buche de Noel
A four-egg chocolate sponge rolled warm in its parchment, filled with sweetened whipped cream and coated in ganache dragged with a fork for bark. A teaspoon of Espresso Powder in the sponge deepens the chocolate.

Gingerbread Yule Log
Spice sponge from a jelly-roll pan, a vanilla bean whipped filling and a white chocolate coat, with sugared cranberries on top. Roll some of the cranberries in White Sparkling Sugar for a bigger sparkle.

White Chocolate Yule Log
Fatless vanilla sponge wrapped around white chocolate buttercream and finished as a snow log, written in grams and cups. The one for a table that already has a brown log on it.

Eggnog Yule Log
Her eggnog goes in the sponge, the syrup soak and the American buttercream, and a dark chocolate bark over the top keeps it looking like a log. Full photo tutorial.

Buche de Noel with Meringue Mushrooms
A pastry chef's flourless chocolate sponge with Dutch-process cocoa, a rum-spiked cream filling, ganache, marzipan holly and meringue mushrooms. Meringue Powder makes the mushrooms stable enough to pipe the day before.

White Chocolate and Berry Jam Yule Log
Six eggs and no butter make a sponge light enough to roll around berry jam without cracking, with white chocolate buttercream spread over the outside. Cut it to show the spiral.

The cocoa for layer cakes
Dutch-Process Cocoa Powder carries 22-24% cocoa butter, which is why a cake built on it stays moist and a frosting whipped with it turns silky. The flavor is bold and rounded, without the sharp bite natural cocoa brings. For a near-black Christmas cake, swap half of it for Black Cocoa.
Christmas Tree and Wreath Cakes
Cakes cut, stacked or baked into a tree or a ring. These are the ones that get carried into the room slowly.

Christmas Tree Cake
Dutch-process chocolate cake stacked and carved into a cone, then covered in green buttercream piped as branches, with a video for the piping. Built on Dutch-process cocoa, so ours slots straight in.

Sheet-Cut Christmas Tree Cake
A reverse-creamed vanilla sponge baked in sheet pans, cut into tree shapes with a paper template and iced in buttercream. Twenty slices, and every one of them is a tree.

Buttercream Christmas Tree Cake
Four chocolate layers, tall and narrow, with a tree piped up the side in shaded greens, then sugar pearls, star anise and sparkling sugar for ornaments. The batter and buttercream link to her base recipes.
Christmas Layer Cakes
White frosting and sugared cranberries turn a plain layer cake into a Christmas cake. These start from a better cake than plain: red and green velvet, chocolate cranberry, black forest and a near-black one.

Cranberry White Christmas Cake
White cake layers, a from-scratch cranberry filling and white frosting under sugared cranberries, rosemary and a sprinkle of sparkling sugar. The cake this whole page is built around.

Christmas Cake with Sugar-Cone Trees
Three vanilla layers with cranberry jam between them and a cream cheese frosting, topped with sugar-cone trees, pomegranate seeds and rosemary. Written in grams and cups.

Chocolate Cranberry Christmas Cake
Chocolate layers with espresso in the batter, cranberry preserves between them and candied cranberries on top. Espresso deepens the chocolate; Dutch-Process Cocoa makes the crumb moister still.

Red and Green Velvet Layer Cake
One velvet batter split and tinted red and green, baked as rounds and stacked in alternating colors under a peppermint whipped cream. The author warns that four layers is the whipped cream's limit.
Our RecipeBlack Cocoa Cake with Cream Cheese Frosting
Our own two-layer cake bakes near-black from Black Cocoa with little to no food coloring, with more of it in the cream cheese frosting. A snow of White Sparkling Sugar makes it Christmas.

Black Forest Cake
Cooked cherries between Dutch-process chocolate layers, whipped cream and chocolate shavings, no kirsch required. Red and white on dark chocolate is Christmas without a single decoration.
Gingerbread and Eggnog Cakes
Molasses and ginger on one side, nutmeg and eggnog on the other. Both want cream cheese frosting and both taste better on the second day.

Gingerbread Layer Cake with Cream Cheese Frosting
Ginger, cinnamon, nutmeg and cloves in three molasses-dark layers, weighed out per pan so they bake even, under a cream cheese frosting. The cookie, in cake form.

Chocolate Eggnog Cake
Eggnog replaces the milk in a butter cake and soaks the baked layers, which then meet a chocolate buttercream and white chocolate snowflakes. A teaspoon of Espresso Powder in the buttercream deepens the chocolate.

Treacle Gingerbread Loaf
A loaf cake dark with treacle and brown sugar, with a tablespoon of ground ginger and chopped stem ginger in the crumb and a ginger syrup icing. Gingerbread for people who mean it.

Chai Cake
Chai spices in the layers and a chai-steeped custard between them, which is where the flavor sits. Cardamom, ginger and black pepper read as December without any molasses at all.

Chai Spice Bundt with Maple Cream Cheese Glaze
Cake flour keeps this bundt fine-crumbed, with two tablespoons of cinnamon behind the cardamom, ginger and cloves, and a maple cream cheese glaze that settles into the ridges.

Gingerbread Bundt with Cinnamon Coffee Glaze
Molasses, half of it blackstrap, with a quarter cup of strong coffee in the batter and a cinnamon coffee glaze on top. The darkest gingerbread on the page.
Christmas Bundt Cakes
The pan does the decorating. A glaze, a dusting of powdered sugar or a scatter of coarse sugar is all a bundt needs to look finished.

Eggnog Bundt Cake
Pound-cake crumb, a vanilla bean, nutmeg and three quarters of a cup of eggnog, dusted with powdered sugar. Dust it with White Sparkling Sugar instead and the snow stays put.

Gingerbread Bundt Cake with Maple Glaze
Butter and molasses make a bundt that slices clean, with a maple glaze over the ridges. Sixteen servings from one pan and no frosting to spread.
Our RecipeCookies and Cream Bundt Cake
The black-and-white bundt from our own kitchen: a third of a cup of Black Cocoa in a buttermilk batter, a vanilla cream glaze and chopped chocolate sandwich cookies over the top. Sixteen slices.
Christmas Sheet and Snack Cakes
One pan, one frosting, twenty-four squares. The cake for the office party and the night the cousins arrive.

Chocolate Peppermint Sheet Cake
One pan, 9x13: Dutch-process cocoa bloomed in boiling water and peppermint extract in the batter, under peppermint buttercream and crushed candy canes. Serves 24 and frosts two days ahead.

Chocolate Peppermint Texas Sheet Cake
Water, butter and cocoa come to a boil before they hit the flour, which is the Texas sheet cake method, and a warm cocoa-peppermint frosting gets poured over the top. Twenty-four servings.

Easy Chocolate Peppermint Sheet Cake
No mixer and one bowl: butter, water and cocoa whisked with buttermilk and two eggs, then a vanilla-peppermint buttercream, crushed peppermint and mini chocolate chips. Twenty-four squares.

Eggnog Sheet Cake with Cream Cheese Frosting
A 9x13 butter cake with a cup and a quarter of eggnog in the batter and an eggnog cream cheese frosting, shaved white chocolate over the top. The eggnog cake for a crowd.

One-Bowl Gingerbread Cake with Molasses Glaze
Boiling water and molasses stirred into one bowl, baked in a 9x13 and glazed with more molasses and chopped pecans. Twenty servings and one bowl to wash.

Cranberry Chocolate Chip Snack Cake
Fresh cranberries, orange zest and chocolate chips in a brown sugar batter with one egg and no frosting. The snack cake that gets cut straight from the pan.

We've Got Answers
How far ahead can I make a Christmas cake?
Further than most people think. Bake the layers up to a month ahead, cool them completely, wrap each one twice and freeze. Thaw them wrapped on the counter for an hour or two, or overnight in the fridge, and they frost like fresh. A cake filled and frosted with buttercream can be finished the day before, kept covered in the fridge, and brought out an hour before serving so the frosting softens. Cream cheese frosting goes on the day before at the earliest, and whipped cream only on the day. Bundt and sheet cakes keep two or three days covered at room temperature, and most taste better on the second day.
How do I make a cake look like Christmas without fondant?
Pick one idea and commit to it. Sugared cranberries and a sprig of rosemary on white frosting is the fastest and reads as Christmas from across the room. A snowfall of White Sparkling Sugar over the top of a bundt or a loaf does the same with no frosting at all, and the crystals keep their sparkle. Crushed candy canes pressed around the base of a chocolate cake, green buttercream trees piped with an open star tip, or chocolate bark shards standing up in the frosting all work on their own. Two of these on one cake start to look like a craft project.
How do I make sugared cranberries that stay dry?
Heat equal parts sugar and water just until the sugar dissolves, then let the syrup cool for five minutes. Syrup that is still hot splits the skins. Stir in fresh cranberries, lift them out with a slotted spoon and spread them on a rack for an hour until the coating turns tacky. Roll them in granulated sugar, or in White Sparkling Sugar for a coarser sparkle, and let them dry another hour. Keep them uncovered at room temperature. The fridge is humid, and humidity turns the sugar coat back into syrup. Make them the day you decorate or the day before.
What is the difference between Dutch-process and natural cocoa in a cake?
Dutch-Process Cocoa has been treated to neutralize its acidity, which gives it a darker color and a smooth, rounded chocolate flavor without the sharp edge of natural cocoa. Ours carries 22-24% cocoa butter, and that fat is what keeps a cocoa cake moist. Natural cocoa is acidic and reacts with baking soda to lift the batter, so a recipe written for natural cocoa and soda alone will rise less if you swap in Dutch. Recipes that use baking powder, or both leaveners, take Dutch-Process without any change. When in doubt, use the cocoa the recipe names, and if it names Dutch, do not swap in natural.
Which frosting holds up on a cake that sits out at a party?
American buttercream, for anything that has to sit for hours. It sets a light crust and holds a piped tree or a tall swirl at room temperature. Swiss meringue buttercream is silkier and smoother to eat, and it holds in a cool room, but it softens once the room warms past the mid-seventies. Cream cheese frosting belongs on gingerbread and red velvet for the flavor, but it is the softest of the three, so keep the cake cold and bring it out an hour before serving. Whipped cream is a same-day frosting that lives in the fridge. A tablespoon of Meringue Powder beaten into American buttercream gives it a firmer set.
What size cake feeds a crowd?
An 8-inch two-layer cake cuts into 12 to 16 party slices and a 9-inch into 16 to 20. A 9x13 sheet cake gives 20 to 24 squares, a 10-cup bundt 12 to 16 slices, and a yule log rolled from a 15x10 pan about 10 to 12. For thirty or more, two sheet cakes beat one tall cake: they bake in one go, frost in minutes and travel flat. If the cake is one of several desserts on the table, count the slices thin and the numbers at the top of each range hold.
