Cranberry Dessert Recipes

Cranberries are too sour to eat by the handful, which is exactly why they bake so well. A little sugar tames them, and that deep red does the decorating for you. Thirty cranberry desserts from bakers who make them every fall, most happy with fresh or frozen berries straight from the bag.

Cranberry Bars & Blondies

Bars are the fastest route from a bag of cranberries to a tin you can share. Most cook the berries down to a jammy middle first.

Frozen berries go in straight from the bag, no thawing, between two layers of buttery oat crumble, with orange juice keeping the filling bright. The recipe's cinnamon is a good job for Royal Cinnamon.

Cranberry Cakes & Coffee Cakes

Whole cranberries hold their shape in a cake and burst just enough to streak the crumb red. Toss them in a spoonful of flour first and they stay put.

For the cookie tin

Cranberry Cookies

Dried cranberries are the easy pick for cookies, since they stay chewy and never weep into the dough. Fresh ones take a little more care and pay you back in tart, juicy bursts.

FROM OUR PANTRY

Tart underneath, crunchy on top

White Sparkling Sugar is an extra-coarse crystal that holds its shape and sparkle right through the oven. Scatter it over muffin tops and galette crusts before they bake, or roll soaked cranberries in it for a sugared garnish that glitters on any cake.

Breakfast counts

Cranberry Muffins, Scones & Breads

The breakfast end of the bag. On a muffin or a scone, the crunchy sugar top is half the appeal, so do not skip the sprinkle.

We've Got Answers

Can I use frozen or dried cranberries instead of fresh?

Frozen, yes, almost anywhere a recipe calls for fresh, and there is no need to thaw them. Add them straight from the freezer so they bleed less into the batter. Dried cranberries are a different ingredient, sweeter and chewier with none of the juice, so save them for the cookies, scones and blondies written for dried rather than swapping them into a pie or bar filling.

How do I keep cranberries from sinking in cake or bread?

Toss the berries in a tablespoon of the recipe's flour before you fold them in, which gives them some grip in the batter. A thicker batter holds them better, and halving large berries makes them lighter. Frozen berries sink less than thawed ones, one more reason to add them straight from the freezer.

How do I make sugared cranberries?

Simmer equal parts sugar and water until the sugar dissolves, let the syrup cool for a few minutes so it does not split the skins, then stir in fresh cranberries and soak them for an hour, or overnight in the fridge. Drain, roll them in sugar, and let them dry on a rack for an hour. White Sparkling Sugar gives the coarse, glittering coat you see on bakery cakes.

How do I tone down the tartness?

Pair the berries with something sweet or rich. Orange is the classic partner, and white chocolate or a cream cheese frosting softens the edges. Cooking the cranberries down with sugar first, the way most bar and pie fillings do, mellows them far more than folding them into a batter raw.

Can I use canned cranberry sauce?

Whole-berry sauce works in bars and as a cheesecake topping, since it is already cooked down and sweetened, so cut the sugar in the filling to match. Jellied sauce is too smooth and too sweet to stand in for fresh berries in a batter. Leftover homemade sauce the day after Thanksgiving is fair game for the bars too.

How long do cranberry desserts keep, and can I freeze them?

Bars, coffee cakes and quick breads keep covered at room temperature for two to three days. Anything with cream cheese, curd or frosting lives in the fridge for up to five days. Unfrosted bars, loaves, muffins and cakes freeze well for up to three months, wrapped tightly and thawed overnight. Pavlovas and trifles are best the day you assemble them.
