1 cup Modern Mountain Meringue Powder
1 cup hot water
In the bowl of a stand mixer, mix powder and water for 1 minute at low speed using a wire whisk attachment.
Insert into piping bag with rosette tip. Pipe onto parchment-lined baking sheet.
Bake at 225° for 2 hours. Without opening door, turn off oven and let cookies sit for ~2 hours (or up to overnight) until they are cool and dry. If still chewy, keep in oven until cookies are light, firm, and melt in your mouth.
