Directions

  1. Pat the chicken dry and season with salt and pepper. In a bowl, whisk together eggs and cream.

  2. In a separate bowl whisk together lupin flour, oat fiber, parmesan cheese, garlic powder, and onion powder. Sprinkle in a dash of salt.

  3. Dip each piece of chicken in the egg/cream mixture, then toss in the breadcrumb mixture until coated. Repeat the process until all chicken is coated.

  4. Add ½ inch of oil to a deep pan. Once hot, add the chicken pieces and fry until golden brown and chicken has an internal temperature of 165° F.

Tips

  • Air fryer? Yes. Prep as directed, arrange in a single layer, air fry at 400 degrees F, and flip after 20 minutes.
  • Best cuts: thighs, drumsticks, or breasts. Wings work less well for this breading.
