What's the difference between natural cocoa and Dutch-Process?
Natural cocoa (that's us) is minimally processed, which keeps the bean's bright, bold, fruit-forward chocolate character intact. Dutch-process cocoa is alkalized, which mellows the acidity and gives it a smoother, richer profile. Neither is better - they're different tools for different bakes. Our Dutch-Process is here when you want smooth and rich. Our Organic is here when you want the bean doing the talking.

Is your Organic Cocoa Fair Trade?
Yes. Our Organic Cocoa is Certified Organic by SCS Global Services and Fair Trade Certified by Fair Trade USA. The certifications are on the pouch, not just in the marketing copy.

Can I substitute your Organic Cocoa 1:1 for Dutch-process cocoa in a recipe?
Usually, but not always. Natural cocoa is acidic, which reacts with baking soda to help bakes rise. Dutch is pH-neutral and typically paired with baking powder. If a recipe calls specifically for Dutch and uses baking powder, a 1:1 swap may throw off the rise. When in doubt, stick with what the recipe calls for or adjust leaveners accordingly.
